Gone Much?
Wow its been a month and all I can say is its been busy.
School started for my girls. Third and fifth graders this year. Definitely a change in homework as they get older. All in all though they seem to be enjoying it so far. Who knows its only been a week. Already I am hearing from my fifth grader, I need a bigger backpack and new shoes. Its true, so looks like a trip to Target or Walmart is in my immediate future.
Handyman (my dear husband) and I decided to set some ground rules with our spending. We did alot this year with vacations and mini vacations. Time to stop ignoring the credit cards and get them paid off. The decision was made that if we can get them paid off by end of next year then the following year we will go to Disney. So far so good, on a cash basis with everything. No frivolous spending and less camping next summer. WIll keep you updated on how this goes.
Eating and exercise has been here and there. Seems I always slip up when we are camping. My weight has maintained. I just need to start working on more consistency so I am not bouncing around but actually losing. As you can see I do lose better when there are less carbs involved so working on that. When I did South Beach I ate one grain and one fruit a day with the rest being protein and veggies and it definitely worked so maybe I will sway in that direction more.
Food/Fitness
B-1.5 deviled eggs,slice of bacon,coffee
L-3 BLT's sans bread w/ a little mayo (rolled in romaine)
S-yogurt (light n fit)
D-eggplant parm (low carb) and green salad
96oz of water
E-3.5 miles outside of alternating running and walking every 1/3 mile roughly
Have a lovely day...I know I will with this gorgeous weather...some rain would be helpful soon.

Good day
Today I told my kids to jump in the car this AM you are coming with me while I run. I wanted to do it outside because the weather was pretty nice. Treadmill looked less appealing. I even let Maddie wear her pajamas and bring her breakfast. I did 3.25 miles in 45 minutes roughly. My 3 miles were 40 minutes. Not bad looks like the intervals have helped me get back to where I was, almost. I went to this lovely park ,with playground for kids, and one complete lap around the whole outer track is .75 miles. I walked the last 1/10 of every mile, except the last where I ran, where there was a huge hill. All in all, I am pretty darn proud of myself. My time is really improving.
Side note, I finally put a hole in my favorite workout pants. Not worth saving them, they are pretty worn through the thigh area. Even if I were to sew the seam it would rip again. No worries, I have plenty workout pants ready.
My rings are tight, not a good sign. I am hoping its from preMS and the humidity we have been having. My food has been great and water is not a problem. 96oz everyday.
Weekend food plan:
-Healthy choices
-Watch portions
-One bite if indulgence is staring me down.
Looking for a good weigh in this upcoming week.
Food Energy
B-2 eggs, lite whole wheat toast w/tsp butter, coffee
L-strawberries, tuna on tomato slices w/ Land o Lakes Naturally Slender cheese slice (only 1 split)
S-yogurt, pack of 100 calorie nuts
D-not sure yet will let you know tomorrow

Stuff
Its been awhile I know. First and foremost I am PreMSing this week so I have like a 2 pound gain. Yuck!!
Last night I binged on peanut butter kandykakes (4) and Sun Chips and a real coke, which I never drink ever!!! So why because I thought I needed it. Like somehow it would solve my problems. Listen to me food being ingested into your body never solves any problems. I don't have any major problems right now. Just that I thought my body was telling me it wanted junk. So I ate it just because. Rant over.
My workouts have been excellent. Evidence seen here in photos A and B.

Wow that gray looks terrible!!
iPhone says walk but it was my run/walk combo intervals of 2:1
Today I did my intervals on the treadmill and watched Full House while doing so. Hey I grew up with that show, what do you want from me. The only aspect of it I despise is that its on TeenNick. Too much teenage hoopla on that channel.
Tomorrow I am doing my Yoga video and walking a couple miles. Will let you know what I think of Jillian and Yoga. It kind of seems like an oxymoron to me the words "Jillian" and "yoga".
Food today
B-one egg, one white, slice of lite whole wheat w/ tbsp PB, coffee
L-McDonalds grilled ceasar salad, apples no caramel and iced coffee w/ equal (keepin it real with MickeyD's - I have kids)
S-yoplait apple turnover yogurt
D-leftover sauteed zukes, peppers, onions, tomatoes, and mushrooms along with one serving Meatza Pizza
S-weight watchers fudge bar
96 oz of water
Meatza Pizza you ask? here you go...
1-2 lbs extra lean ground beef or turkey (depends on the size pan you are using)
2 eggs
Tomato Paste/Tomoto Sauce(watch the grams of sugar - keep it low, less than 3 g)---> I use regular spaghetti sauce 4g carb
No-fat cheese - chedder & mozerella (or low-fat)
Veggie/Canadian bacon toppings
Brown the meat in a skillet. Don't overcook it. Take it just past the pink stage.
Drain the grease off. Put in casserole dish and let cool.
Add two eggs, some cheese and mash it all around and then pack it down tight.
Mix up a sauce to the consistancy of your liking. Use a small can of tomato paste (6 oz?) and add tomato sauce. Sprinkle in some oregano. Spread it over the meat "crust."
Sprinkle some cheese over the meat and then add your favorite toppings such as:
canadian bacon
onions
green (bell) peppers
zuchinni
"green" tomatoes (they stay firm and taste great!)
mushrooms
olives
Add some more cheese
Cook at 350 until cheese melts - about 40-45 minutes.

New Recipe
So I had some leftover roasted butternut squash from another nights dinner. It was still sitting in there and then like the Grinch I got an idea. An awful idea. The Grinch (me) got a wonderful, *awful* idea! Make soup!!!!!
I gathered some onion, thyme, sage, chicken stock, half and half, and my trusty immersion blender (kitchenaid empire red). I sauteed the onion with the butternut squash til the onions were almost translucent and squash was heated through. Added the thyme and sage, no salt or pepper due to the fact it was already on the squash from when I previously cooked it, left the mixture on the flame a little longer for all flavors to combine. After turning off the flame, I carefully put the concoction in a tall cylindrical container added about a cup of chicken broth grabbed my blender and went to town. I knew it was done when it came to a nice pea soup consistency and added about a quarter cup of half and half. Threw the blender on once more and then Voila soup du jour. It was sooooooooooooooooo good. Did I mention it was good? I still have some left which I plan on taking a picture and posting here. Had to save some for Dan, mi esposa.
So that was my victorious creation of the day. Ever make up a recipe that tasted Dynomite? Let me know.
BTW it was *awful* because I could have eaten all of it.

A Horse of a Different Color
A workout can be anything as long as you are moving and getting that heart pumping. Well my workout yesterday was mowing and boy did I sweat. It was hot, humid, and I should have had a bucket around my neck to collect all the sweat. Ugh! I have a half acre of land to cut. The front yard I use a push mower (self propelled), backyard I use a tractor but cut out all the borders with the self propelled. Took me several hours, I even managed to cut the front yard on a diagonal. Occasionally I cut the grass a different way to shock it, I guess you could say. Looks purdy!!! Heres a shot from my bedroom

Food yesterday was low in carbs. Holding back on some of the carbs to get my sugar levels back in check.
-one egg, coffee
-mexican chicken (seasoned with chili powder and cumin, salsa/cheese on top), 2 cups of green beans
-starbucks decaf latte (made with half and half) a nice treat never affects my weight loss when I cut carbs
-Quarter chicken dark w/cauliflower
-Special Dark Hershey pieces (maybe 10-15)
64oz of water (need to start mentioning the water because it always helps me feel stabilized and hydrated with no bloat)

Sweetest Place on Earth
Yesterday we went to Hersheypark with some friends and it was a blast. The chocolate temptation was mostly on the tour right before you enter the amusement park and yes I did indulge in the free chocolate at the end of the tour ride. It was a mini size bar so no harm no foul, right? It was hot and humid but that didn't stop us from enjoying what the park had to offer. Alot of coasters and a huge waterpark, rightly called the Boardwalk, were just some of our stops. We also hit up Zoo America, played some games, and managed not to blow a wad on souvenirs. All in all I would definitely recommend hitting up this sweet destination if in the area.
Food yesterday
-2 egg omelette filled with spinach, cheese, tomatoes, onions and peppers, 2 slices turkey bacon and 4 chicken nuggets covered with sausage gravy (I know).
-grilled chicken sandwich, few cheese fries, small hershey bar
-kettle popcorn
-half a ciabatta sandwich from starbucks
My choices were ok and I know I definitely burned alot of calories walking around the park. By the end of the night my legs were screaming at me. Did I mention I was up at 530am doing my run/walk combo? 3.2 miles 2:1 intervals
